A year or two back, my daughter came home with a cookbook from school. Some of the recipes in it are amazing!
When my kids were small and I was a SAHM (Stay At Home Mom), I made everything from scratch; pancakes (still do), waffles, Italian dressing, and sometimes BBQ sauce.
In this cookbook is one of the best BBQ sauce recipes I’ve ever tasted!
1/4 c firmly packed brown sugar substitute
2 tsp onion powder
1 tsp each of celery seeds, garlic powder, chili powder
1 1/4 c low carb ketchup
2 tsp white vinegar
1 TBSP prepared mustard
1 tsp lemon juice
1 tsp liquid smoke (I’m generous with this)
Put all ingredients in a pan, boil, turn heat down and simmer for 10 mins.
Coat onto previously boiled chicken is cooked completely.
Keep coating during baking and save some on the side to serve with chicken.
(If you are not cooking for diabetics, this recipe works just fine with the typical ingredients)

I still never really found out why my daughter was gifted this book (though because it is branded with the Cleveland Clinic stamp, I assume it was part of a talk the clinic may have given the kids that day).
I am very grateful. Because unlike many ‘overly involved’ cookbooks, this one is well organized, simple, and has a variety of recipes for every day meals, parties and holidays too.
